- 500 g beans
- 1 large onion
- 1 large carrot
- 1 small celery
- 1 parsnips
- 1 root parsley
- lovage
- 1 red pepper
- 1 teaspoon sweet paprika
- a pinch of dried thyme
- salt
- 4 tablespoons oil
- a few peppercorns

Preparation

Bean soup

•  For four servings 500 g beans using small grain. Put to soak for a few hours to shorten cooking. Boil beans changing the water three times. Beans should simmer on low heat for a long time, with the pot covered. As a secret, add a few peppercorns to a boil.

•  Place large sliced ​​roots and onions and let the beans simmer on low heat with them for 30 minutes.

•  When the beans begin to crush slightly, add chopped pepper and paprika. After 15 minutes, add the carrots.

•  Towards the end of boiling add dried thyme, salt to taste and 4 tablespoons oil. Leave it a few minutes and add lovage.
