Ingredients

Baked potatoes

- 1 kg potatoes
- 2 onions
- 2 tablespoons oil
- 1 teaspoon of tomato sauce
- 2 bay leaves
- 200 g tomato pieces
- 1 bunch parsley
- salt
- pepper

Cooking time: 35 minutes

Preparation

Baked potatoes

•  Cut onion slices and put to cook in hot oil.

•  After it has hardened add diced potatoes. Put a teaspoon of bullion in a cup of hot water, mix well and pour over the potatoes and onions.

•  Let the potatoes boil for 8 minutes at low heat.

•  After they have softened, add the chopped tomatoes and bay leaf. Mix and cover the bowl where the boiled potatoes.

•  When potatoes are imbued, add salt and pepper and chopped parsley.

Serving

Baked potatoes

"Baked" is the generic name for dishes that decreased with the onion and tomato juice. Baked potatoes accompanied by some roasted peppers and alongside warm polenta.
